Apricot Marshmallow Log
Ingredients
- 250g plain biscuits, crushed
- 200g chopped marshmallows
- 250g dried apricots, chopped
- ¼ cup chopped mixed nuts (optional)
- 400g sweetened condensed milk
- 1 cup desiccated coconut
Method
- Combine the crushed biscuits, marshmallows, apricots, and nuts (if using) in a large bowl.
- Heat the condensed milk in the microwave for 2–3 minutes on high. Allow to cool slightly.
- Add the cooled condensed milk to the dry mixture and mix well. (If the milk is too hot, the marshmallows may melt.)
- Divide the mixture in half. Shape each portion into a log.
- Roll each log in desiccated coconut to coat.
- Store in the freezer. Remove 15 minutes before serving.
- Slice and enjoy!
