Apricot Marshmallow Log

Method

  1. Combine the crushed biscuits, marshmallows, apricots, and nuts (if using) in a large bowl.
  2. Heat the condensed milk in the microwave for 2–3 minutes on high. Allow to cool slightly.
  3. Add the cooled condensed milk to the dry mixture and mix well. (If the milk is too hot, the marshmallows may melt.)
  4. Divide the mixture in half. Shape each portion into a log.
  5. Roll each log in desiccated coconut to coat.
  6. Store in the freezer. Remove 15 minutes before serving.
  7. Slice and enjoy!
