Banana Cake

Ingredients

• 2 eggs
• 2 mashed bananas
• 1 cup sugar
• 1½ cups flour
• 100g butter
• 1 teaspoon baking soda
• 4 tablespoons milk

Method

1. Preheat oven to a moderate temperature (about 180°C/350°F).
2. Beat eggs and sugar together until light.
3. Melt butter with milk, then mix in the mashed bananas.
4. Combine wet ingredients with flour and baking soda. Mix until just combined.
5. Pour into your chosen tin:
• Loaf tin – bake for 45 minutes
• Ring tin – bake for 45 minutes
• Sponge roll tin – bake for 15–20 minutes
6. Cool slightly, then dust with icing sugar or ice with lemon icing if desired.
