Banana Cake
Ingredients
- 2 eggs
- 2 mashed bananas
- 1 cup sugar
- 1½ cups flour
- 100g butter
- 1 teaspoon baking soda
- 4 tablespoons milk
Method
- Preheat oven to a moderate temperature (about 180°C/350°F).
- Beat eggs and sugar together until light.
- Melt butter with milk, then mix in the mashed bananas.
- Combine wet ingredients with flour and baking soda. Mix until just combined.
- Pour into your chosen tin:
- Loaf tin – bake for 45 minutes
- Ring tin – bake for 45 minutes
- Sponge roll tin – bake for 15–20 minutes
- Cool slightly, then dust with icing sugar or ice with lemon icing if desired.
