Banana Loaf

Method

  1. Cream butter and sugar until light and fluffy.
  2. Beat in eggs one at a time.
  3. Mash bananas and beat in with vanilla essence.
  4. Sift flour and baking soda together.
  5. Add sifted ingredients alternately with milk, mixing until just combined.
  6. Line a loaf tin with baking paper and pour in the batter.
  7. Bake at 180°C for 40 minutes, or until a skewer inserted comes out clean.
