Banana Loaf
Ingredients
- 125g butter
- 3/4 cup caster sugar
- 2 eggs
- 2 bananas
- 1 tsp vanilla essence
- 1 1/2 cups self-raising flour
- 1/2 tsp baking soda
- 2 tbsp milk
Method
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Mash bananas and beat in with vanilla essence.
- Sift flour and baking soda together.
- Add sifted ingredients alternately with milk, mixing until just combined.
- Line a loaf tin with baking paper and pour in the batter.
- Bake at 180°C for 40 minutes, or until a skewer inserted comes out clean.
