Bread and Butter Pudding

Method

  1. Spread bread with butter and cut into 2 cm cubes.
  2. Place bread cubes, caster sugar, and sultanas into a 1.25L casserole dish.
  3. Heat milk and vanilla essence in the microwave on high for 3 minutes.
  4. Gradually whisk the hot milk into the eggs, then pour over the bread mixture.
  5. Sprinkle the top with brown sugar and nutmeg.
  6. Cook in the microwave on medium-low for 13–15 minutes, or until set.
  7. Allow to stand for 5–10 minutes before serving.
