Caramel Muesli Crumble Slice
Note: Use an oat-based muesli with minimal dried fruit (e.g. Ceres Organics Golden Crunch or Bircher mix). No food processor? Substitute fine rolled oats and melt all the base ingredients before mixing.
Ingredients
For the Muesli Crumble Base & Topping
- 1 1/2 cups muesli (e.g. Ceres Organics)
- 1/2 cup brown sugar or coconut sugar
- 125g butter
- 4 tablespoons coconut oil
For the Caramel Filling
- 3–4 tablespoons golden syrup
- 60g butter
- 1 x 395g can sweetened condensed milk
Method
- Preheat oven to 180°C. Line a 20–22cm square baking tin with baking paper.
- Place muesli, sugar, butter, and coconut oil in a food processor. Blitz until crumbly and the mixture holds when pinched.
- Press two-thirds of the crumble mixture into the lined tin. Bake for 12–15 minutes until golden. Remove from oven and let cool slightly.
- In a pot, melt butter and golden syrup over low–medium heat. Turn off heat and stir in condensed milk until smooth.
- Pour the caramel over the baked base. Smooth evenly.
- Dot remaining crumble mixture on top and sprinkle with extra muesli.
- Bake for another 20–25 minutes until the topping is golden and the caramel is bubbling slightly at the edges.
- Cool completely, then chill in the fridge or freezer until set. Slice into 30+ small pieces.
