Chocolate Self-Saucing Pudding
Serves 4–6
Ingredients:
- 60g butter
- 1 1/2 cups self-raising flour
- 1/2 cup caster sugar
- 1/4 cup cocoa powder
- 3/4 cup milk
- 1 tsp vanilla essence
- 1 cup brown sugar
- 1/3 cup cocoa powder (extra)
- 2 cups boiling water
Instructions:
- Place butter in a Pyrex pudding bowl and melt for 45 seconds on HIGH (microwave).
- Stir in flour, caster sugar, cocoa, milk, and vanilla. Beat until smooth.
- In a separate bowl, combine brown sugar and extra cocoa, then sprinkle over the pudding mixture.
- Gently pour the boiling water over the mixture.
- Cook for 12–13 minutes on MEDIUM (microwave). Allow to stand for 5 minutes before serving.
- Serve hot with ice cream.
