Clark Family Fudge
Ingredients:
- 2 tins sweetened condensed milk
- 250g butter
- 100ml liquid glucose
- 2 cups firmly packed brown sugar
- 3 tablespoons golden syrup
- 1 teaspoon vanilla essence
- 400g chocolate (white, milk, or dark)
Instructions:
- Place all ingredients except chocolate and vanilla in a large pot.
- Stir over medium heat until the butter melts and sugar dissolves.
- Bring to a boil and gently boil, stirring constantly, for 6–8 minutes, or until the mixture is very thick and turns a dark caramel or brown paper shade (soft ball stage).
- Remove from heat and let stand until the bubbles subside.
- Stir in vanilla and chocolate until fully melted and smooth.
- Pour into a prepared tin and smooth the surface.
- Cool at room temperature for about 3 hours, then refrigerate until firm.
- Cut into pieces and store in an airtight container in the fridge for up to 6 weeks. Can also be frozen.
