Clark Family Fudge

Ingredients:

Instructions:

  1. Place all ingredients except chocolate and vanilla in a large pot.
  2. Stir over medium heat until the butter melts and sugar dissolves.
  3. Bring to a boil and gently boil, stirring constantly, for 6–8 minutes, or until the mixture is very thick and turns a dark caramel or brown paper shade (soft ball stage).
  4. Remove from heat and let stand until the bubbles subside.
  5. Stir in vanilla and chocolate until fully melted and smooth.
  6. Pour into a prepared tin and smooth the surface.
  7. Cool at room temperature for about 3 hours, then refrigerate until firm.
  8. Cut into pieces and store in an airtight container in the fridge for up to 6 weeks. Can also be frozen.
