Coconut Ice Square
Ingredients
Base:
- 125 g butter
- 1 egg
- 1 tsp baking powder
- Sugar (amount not specified)
- Flour (amount not specified)
Topping:
- 60 g butter
- 3/4 cup coconut
- 2 tbsp milk
- 2 cups icing sugar
- Red food colouring (a few drops)
Instructions
Base:
- Cream butter and sugar.
- Add the egg and dry ingredients to form a dough.
- Press into a sponge roll tin.
- Bake at 190°C for 20 minutes.
Topping:
- Melt butter, coconut, milk, and icing sugar together.
- Add a few drops of red food colouring and mix well.
- Pour over the baked base.
