Coconut Ice Square

Base:

  1. Cream butter and sugar.
  2. Add the egg and dry ingredients to form a dough.
  3. Press into a sponge roll tin.
  4. Bake at 190°C for 20 minutes.

Topping:

  1. Melt butter, coconut, milk, and icing sugar together.
  2. Add a few drops of red food colouring and mix well.
  3. Pour over the baked base.
