Coconut Ice
Ingredients:
- 1/4 cup milk
- 500g sifted icing sugar
- 100g butter
- 1 1/2 cups coconut
- 2–3 drops red food colouring
- 1 teaspoon raspberry or vanilla essence
Instructions:
- Grease or line a tin.
- Place milk, icing sugar, and butter in a large microwave-safe dish.
- Microwave on high for 3 minutes.
- Remove and stir well.
- Microwave for another 1 minute.
- Remove from microwave and add coconut, food colouring, and essence.
- Beat together with a wooden spoon until well combined.
- Pour into the prepared tin and leave to set.
