Fizzing Sherbet
Old-fashioned fizz-on-your-tongue sherbet powder
Ingredients
- 1 cup icing sugar
- 1 tsp baking soda
- 1 tsp powdered citric acid
- 1 tsp powdered tartaric acid
- 1/2 tsp lemon or other essence
or
- 2 Tbsp fruit drink powder
Instructions
- Combine all ingredients using a food processor or fine sieve until well mixed.
- If either acid is crystalline, grind it into powder using a pestle and mortar or the back of a spoon.
- If using liquid essence, mix in a food processor for even distribution.
- Traditional flavours include lemon, orange, and raspberry. Adjust acids and flavouring to taste.
Presentation Suggestions
- Package in small cellophane or zip-lock bags.
- Include a short straw or licorice tube for dipping.
- Or serve in teaspoon amounts on the palm for tasting with the tongue tip.
