Giant Sausage Roll

Method

  1. Put sausage meat, roasted pepper, onion, tomato sauce, balsamic vinegar, mushrooms, and breadcrumbs in a bowl. Mix with your hands until combined.
  2. Roll pastry into a rectangle.
  3. Place sausage mixture down the centre of the pastry.
  4. Make a well down the centre of the sausage mixture and fill with tomato relish.
  5. On either side of the sausage mixture, cut diagonal strips in the pastry. Starting at the top, place a left strip over the mixture, then a right strip, continuing to plait until all the meat is covered.
  6. Brush the pastry with the beaten egg wash and place in an oven heated to 170°C for 30 minutes.
  7. Turn the oven down to 150°C and bake for another 10 minutes or until the pastry is golden all over.
