Orange Cake

Instructions

  1. Preheat the oven to 180°C (Bake).
  2. Grease a ring tin or a 20–23 cm baking tin with cooking spray or melted butter. Line the base with baking paper.
  3. Place the quartered orange in a food processor and blitz until pulped.
  4. Add eggs and sugar to the processor, blend for 20 seconds, then scrape down the sides.
  5. Add melted butter and blend for another 20–30 seconds until well combined.
  6. Add self-raising flour and blend for 20 seconds until smooth with no lumps.
  7. Spoon the mixture into the prepared tin.
  8. Bake for 35 minutes or until a skewer comes out clean.
  9. Let the cake cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  10. To make the icing, mix the melted butter and vanilla essence first. Then add the icing sugar.
  11. Add water a tablespoon at a time until the icing is smooth but not too runny – it should just start to fall from the spoon.
  12. Spread icing over the cooled cake and store in an airtight container.
  13. Will keep for at least 3 days. Enjoy!
