Orange Cake

Ingredients
- 1 whole orange – washed & pulped, skin and all (remove the green stalk bit)
- 125 g melted butter
- 1 cup white sugar
- 2 medium eggs
- 1 1/2 cups self-raising flour
Icing
- 1 1/2 cups icing sugar
- 2 teaspoons melted butter
- 1 teaspoon vanilla essence
- 1–3 tablespoons water
Instructions
- Preheat the oven to 180°C (Bake).
- Grease a ring tin or a 20–23 cm baking tin with cooking spray or melted butter. Line the base with baking paper.
- Place the quartered orange in a food processor and blitz until pulped.
- Add eggs and sugar to the processor, blend for 20 seconds, then scrape down the sides.
- Add melted butter and blend for another 20–30 seconds until well combined.
- Add self-raising flour and blend for 20 seconds until smooth with no lumps.
- Spoon the mixture into the prepared tin.
- Bake for 35 minutes or until a skewer comes out clean.
- Let the cake cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- To make the icing, mix the melted butter and vanilla essence first. Then add the icing sugar.
- Add water a tablespoon at a time until the icing is smooth but not too runny – it should just start to fall from the spoon.
- Spread icing over the cooled cake and store in an airtight container.
- Will keep for at least 3 days. Enjoy!
